This fat-free frosting is gloriously sweet and sticky. Because of it's texture, we don't recommend it for complex cake decorating. Works best simply as a spread-on frosting.

Prepare a double boiler (Place a smaller saucepan inside a larger saucepan that contains water. Make sure the water doesn't flow over into the smaller saucepan.) Combine all ingredients except vanilla in top of double boiler. Over high heat, cook until water in bottom of double boiler starts to boil. As water heats, start beating egg white mixture on high speed with an electric mixer. Continue to beat for about 7 minutes, or until mixture forms stiff peaks. Remove from heat and add vanilla extract. Beat for an additional 2 minutes.
